Beef Biriyani – An Essential Beef Recipe for Guest.
Biriyani is a special food of South Asian countries. Generally this dish is served for guest entertainment in the special program. And without this menu, no festival is fulfill. It is cooked by mixing together the fragrant rice, ghee, spices and meat. We can use chicken, mutton, beef for cooking this menu. Ingredients of Beef Biriyani
Beef – 2 kg
Plain yogurt/Curd – 6 tablespoon
Ginger paste – 4 teaspoon
Garlic paste – 2 teaspoon
Cumin paste – 2 teaspoon
Soybean oil – 1 cup
For making paste:
Chopped onion – 1 cup
Joiphal (nutmeg) – 1 teaspoon
Jaitri (mace) powder – 1 teaspoon
Allspice – 6-7 pieces
Black pepper – 8-10 pieces
Red chili powder – 2 teaspoon
Coriander powder – 2 teaspoon
Garam masala powder – 2 1/2 teaspoon
Bashmoti /chinigura rice washed and drained – 1kg
Whole cardamon – 6 pieces
Cinnamon stick 2 – 3 pieces
Bay leaf – 3 small
Salt – to taste
Ghee – 6 tablespoon
Crispy fried onion (Beresta) – 1 cup
Dried prunes (alu bukhara) – 6 to 8 pieces
Green chilies – 8 to 10 pieces
Kewra essence – 4 tablespoon
Crispy Fried onion (Beresta) – 4 to 6 tablespoon
Fried Almond,pistachio – 4 tablespoon
Fried Raisins (kishmish) – 2 tablespoon
Instructions of Cooking Beef Biriyani
Clean and drain beef pieces well. Mix beef with ginger,yogurt and garlic in a deep bowl. Keep aside for 1 1/2 hour. Make smooth paste with above paste ingredients. Heat oil in a pressure cooker and add spice paste into cooker. Add 1/2 cup water. Mix with ingredients. Then add cumin paste,spice powder and saute’ three minutes. Give into cooker marinated beef pieces, salt and keep stirring til water comes to absorb. Next add 1 1/2 cup water. Cover the lid and cook for 20 minutes on medium high flame. Then cooked open the lid and keep on low flame until gravy is thick. Remove from flame and keep aside.
Clean and drain rice well. Fire ghee in a deep bottom pan and add above whole garam masala. Once spulleterd then add rice and fry 3-4 minutes. Add 800 ml water, salt and bring to boil on high flame. Salt to taste at this time. Once boiled and water comes to absorb then reduced the flame to low and cover with lid for 10 minutes. Keep cover on low flame.
Remove the lid of the rice and Pour of rice on a bowl. Pour the cooked beef on a level over the remaining rice of the pan. scatter green chilies and fried onion . Next add alu bukhra dip into rice. Add kewra essence. Cover and place a griddle under the pan. cooked with steam on a very low flame for 20 minutes. Once the nice fragrance comes from biriyani, it is done. Remove from flame and keep cover with lid before serving.
Don’t jumble biriyani into the pan. Take a big flat bowl and transfer biriyani gently with a spoon into bowl. Sprinkle raisins, fried onion and almond-pistachio. Serve hot with Cucumber pieces, Borhani and Chicken Roast. Enjoy this beef biriyani among the beef recipes !
