Ingredients of Hilsa Fish Egg Curry:

1. Hilsa egg – 5 pieces
2. Onion slices – 1/2 cup
3. Onion paste – 1/2 cup
4. Ground red chili – 1 teaspoon
5. Turmeric powder – 1 teaspoon
6. Mustard Powder – 1/2 teaspoon
7. Dry Red Chili – 3 to 4 roasted
8. Crispy Fried onion – 3 tablespoon for garnishing
9. Salt to taste
10. Oil – 1/2 cup

Instructions of Cooking Hilsa Fish Egg Curry :

Preparation:

First we’ll wash the hilsa fish egg with clean water properly.
Sprinkle some salt and turmeric over hilsa egg.
Heat oil and fry the chopped onion for 4 minutes until brown. Keep aside.

Method:

Pour 1/2 cup oil to the fry fan. Heat running oil and fry onion until soft. Keep aside.  Add all ingredients except fried onion. Saute for 3 minutes with a little water. Now place the fried egg and add some water. Salt to taste. Cook on medium heat until water dries up. Remove from heat, sprinkle fried onion and garnish with roasted chili. Serve with rice or polau.

The recipe of Hilsa Fish Malai Curry

Ingredients of Hilsa Fish Malai Curry:

1. Hilsh fish – 1kg regular piece
2. Oil – 1/2 cup
3. Ghee – 1.5 teaspoon
4. Onion Paste – 1/2 cup
5. Ginger Paste – 3 teaspoon
6. Coriander Paste – 1 teaspoon
7. Red Chili Powder – 1.5 teaspoon
8. Sugar – 1/2 teaspoon
9. Salt – to taste
11. plain yogurt – 4 tablespoon
12. Coconut Milk – 1 cup
13. Green Chili

Instructions of Cooking Hilsa Fish Malai Curry :

Preparation:

Wash and clean fish pieces. Remove water and pat dry with kitchen pepper. Keep aside.

Method:

Heat ghee and oil in a deep medium pan. Add onion paste and ginger paste. Cook until brown and oil is separated from gravy. Mix yogurt, red chili, sugar, coriander in a bowl and mix in to pan. Add salt and sugar to taste. Add some water and cook on low heat until oil is separated from gravy. Then place fish pieces and fry a little. Turn over the fish after two minutes to cook the other side. Finally add green chilies, coconut milk and 1 cup water. Cover and cook on low heat until thick and tender. Cooked turn of fire and serve with steamed rice or polau.
