Hilsa Paturi – Mouth Watering Dish of Hilsa Fish
We have tasted so many recipes of hilsa fish earlier. Today I’ll write an exclusive menu of hilsa fish named Hilsa Paturi. Hilsa Paturi is a traditional Bengali recipe for special occasions. This menu is cooked within a banana leaf with vapor. The taste of the mustard paste and the smoky flavor from pan, frying banana leaves and the fish makes the recipe unique. Hilsha can be prepared in different ways but the most popular way of cooking is steamed or Hilsa Bhapa and the Hilsa Paturi. Hilsha Paturi is a authentic Bangladeshi recipe. It is easy to cook and a popular recipe in the season of Hilsa.
Ingredients of Hilsa Paturi :
1. Hilsa fish – 10 pieces
2. Mustard paste – 4 tablespoon
3. Poppy seed paste – 2 tablespoon
4. Plain yogurt – 1.5 cup without water
5. Red Chili Powder – 0.5 teaspoon
6. Turmeric powder – 1.5 teaspoon
7. Cumin powder – 1 teaspoon
8. Ginger juice – 1 teaspoon
9. Garlic paste – 1.5 teaspoon
10. Onion – 1 cup finely chopped
11. Mustard oil – 0.5 cup
12. Green Chilies – 8 pieces
13. Green Chili Paste – 0.5 teaspoon
14. Salt – to taste
15. Banana leaf – 1 piece
16. Pumpkin leaf – 10 pieces
Instructions of Cooking Hilsa paturi :
Cut the fish into pieces, take out the head and tail. Mix spices with fish and keep it for 8 minutes. Put one piece of fish in the middle of two pumpkin leaves with 3 tablespoon marinade and one green chili. Fold the leaf around the fish and tie with a discolored thread.Again the process for all the pieces of hilsha.
Heat a pan and place the banana leaf. Leave the folded pieces on the banana leaf and cover it with another piece of banana leaf. Cook for 10 minutes on a low heat. When one side of the folder is burnt,turn it. Cook for another 8 minutes. Make sure that the fish inside is cooked. Remove from pan. Unfold and serve hot with steamed rice.
